For fine dining, you can't go wrong with Italian cuisine. From the apertivo (aperitif), then the antipasto (appetiser), only then is the true first course, primo, then secondo, and then you can have the main event at last! Formaggio e fruta (cheese and fruit) will follow this up, plus dolce (sweet dessert), caffe and digestive. So, with all these dishes, you might be wondering where to start! But here's a couple of great Italian recipes that you can make and enjoy at home.
Italian Omelette Recipe
Ingredients:
Eggs
Parsley
Basil
Garlic
Grated cheese
Salt
Pepper
Olive oil
Pizza Pan
A simple omelette is a great dish, and here's how to prepare a quick and easy one, Italian style. Use one egg per person, whisking the contents together and seasoning with parsley, basil, garlic, grated cheese and salt and pepper to taste. Some like to add bread crumbs soaked in water, though it is perfectly enjoyable without them.
Add the olive oil to a frying pan and heat it until it's almost spitting, before pouring in the mixture. Stir the compound with a spoon to keep it detached from the pan. When the eggs are solidifying flip the omelette. Take a plate (warming it in the oven beforehand can help the omelette retain its shape) and place it on top, then use the pan's handle and turn the omelette onto the dish, adding oil to the pan and place the omelette over to cook the other side. When the base is well-done, remove the omelette. For even more of an Italian feel you can add pasta to the eggs, or rice or mussels, zucchini or onions. Dish up and enjoy!
Panettone Recipe
Ingredients:
14 oz of sugar
3 eggs
7 oz of yeast
1 tbsp of cinnamon
1 oz candied lemon verbena
A pinch of salt
Rum to taste
To make this bread, start off by mixing the sugar, eggs, yeast and cinnamon together, then kneading until you get a smooth, elastic pastry. If you like you can add milk to soften it up, then add the raisins and an ounce of candied lemon verbena. Section the pastry into a pair of large pieces, then with a knife, make a cross on top of each, and let them sit for several hours as they rise. Before baking, place the egg yolk on top using a spoon, and then you're done!
